One of my fav snacks are Energy Bites. They are nutritious, delicious and so easy to make your little one can even help! Here’s my go to recipe 😊
what you need…
Dry ingredients
1 cup quick cook oats
1/2 cup flax
1/2 cup coconut
2 tbs of chia seeds
Wet ingredients & extras
2 cups unsweetened peanut butter (or nut butter of choice)
1/2 cup of maple syrup (or sweetener of choice)
splash of vanilla
2 tbs (or more) dark chocolate chips
Directions
Combine all of the dry ingredients in a large bowl (leave the chocolate chips seperate for now). In a different bowl, combine the peanut butter and maple syrup and stir until combined, splash in some vanilla. Slowly add the dry mix into the wet mix and stir. You want a thick consistency that isn’t too dry. As you are combining your ingredients you might need to add a bit of additional peanut butter to prevent your Bites from being too dry.
Once everything is combined add in your chocolate chips and give the mix a final stir. This is also a good time for your little one to get their clean hands in and help do the final mix!
Forming the Bites
Get out a large Tupperware container and line it with parchment. Make sure you tear some additional pieces of parchment as you will end up stacking the Bites into several layers.
If you have an ice cream scoop, use it, they make the perfect size and shape bite, if not, a large spoon works too.
Scoop out individual Bites and place them into the Tupperware, keeps going until you’ve used up all of your mix (makes approx 24)
Place your container in the fridge for at least 1 hour to help the Bites firm up then, enjoy! Leave the container in the fridge so that the Bites remain fresh and yummy.
Your little one will love them and they are full of protein, fiber and omegas, the perfect snack 😁
