I’m always looking for easy, tasty, healthy dinners to make. I attempted to make twice baked potatoes a while back and it was a fail lol but out of that I created a new recipe which is totally delicious and way easier!
3 potatoes for baking
1 cup milk of choice (I used almond)
1 tablespoon butter (or butter substitute- I used becel vegan margarine)
2 tablespoons sour cream (I used tofutti sour supreme vegan sour cream)
1/2-1 cup ground meat (I used Yves vegetarian ground round)
1/2 cup chopped veg
1/2 cup shredded cheese (I use daiya vegan shredded cheddar)
1/2 cup nutritional yeast (optional)
2 teaspoons minced garlic
pinch of salt and pepper
Bake your potatoes at 400 for 45-60 minutes until soft to the touch (if you are short on time they can be microwaved.)
Stir fry the ground meat and veggies together and set aside.
Combine milk, butter, sour cream, nutritional yeast, garlic, salt & pepper together and set aside.
Remove the potatoes from the oven and cut into small chunks.
Combine everything together in a medium clear baking tray.
Sprinkle the shredded cheese on top.
Bake at 350 for 25 minutes then broil on high for 10 minutes.
Let cool and enjoy!
Leftovers, (if there are any) can be frozen!
