I know every parent wants to make sure their kiddo has a nutritious breakfast to start the school day off right but making a quick, healthy breakfast on those early school mornings isn’t always easy. Overnight Oats are all the rage and everyone seems to have their favourite recipe. Well, so do I! It’s a delicate balance with a little one when you’re trying to create a breakfast they will enjoy but is still healthy & nutritious.
Here’s one that works for my little guy!
1 container unsweetened dairy free yoghurt (Almond or Coconut milk are my fav)
1/2 cup unsweetened, fortified, dairy free milk (I use Almond)
1/4 cup chia seeds
1/4 cup hemp hearts
1/4 cup quick cook oats
1 teaspoon vanilla extract
1 dropper of stevia
In a container that has a matching airtight lid combine the yoghurt, milk, vanilla & stevia and stir until combined. Add each of the Chia seeds, hemp hearts & oats, slowly stir until combined. Seal tightly and refrigerate overnight. Add fresh fruit (if you’d like) serve and enjoy!
A few things to note!
This is a very nutritious breakfast! If you use the ingredients listed above your little one will be getting:
Omega-3 & 6
Amongst many other vitamins & minerals.
Also, this recipe contains NO SUGAR if you use the unsweetened version of both yoghurt & milk, the sweetness comes from the vanilla & stevia.
Lastly, if your little one prefers regular milk & yoghurt this recipe can easily be altered to include them.
